Overview of the current status of kitchen oil fume purifiers in China and abroad: Kitchen oil fume treatment was started earlier in foreign countries and regions such as Hong Kong, China. Since the 1970s, there have been reports on kitchen oil fume treatment methods. Japan has reported patents for the treatment of kitchen oil fume using special ceramic filter materials.
Overview of the current status of kitchen oil fume purifiers in China and abroad: Kitchen oil fume treatment has been carried out earlier in foreign countries and regions such as Hong Kong, China. Since the 1970s, there have been reports on kitchen oil fume control methods. Japan has patented reports on the use of special ceramic filter materials to control kitchen oil fume, using organosilicon binders and a mixture of chlorides of Ti; Zr; La and/or Mn to remove amines and indoles from oil fume. In terms of absorption treatment, there are methods for absorbing oil fume using solutions and foams; in the United States, there are methods for removing oil fume using precious metal catalysts such as Pt, Ph, Ru, and Os coated on porous refractory bricks, and methods for removing oil fume using circulating water systems; in the United Kingdom, there is a patented method for removing oil fume through serpentine condensers; in Germany, there is a patented method for removing oil fume using heat exchange principles; in South Africa, there is a patented method for removing oil fume using a spiral sprayer; and in Hong Kong, China, there is a method for removing kitchen oil fume using electrostatic methods.
The main purification equipment in foreign countries and Hong Kong, China, includes electrostatic oil fume purifiers, combustion purifiers, catalytic purification methods, Venturi scrubbers, oil separators, oil mist filters, packed tower scrubbers, etc. Due to the differences in dietary habits between Western countries and China, especially the characteristics of more steaming and less frying in the catering industry in the United States and Europe, large-scale catering industries and food processing plants mostly use thermal oxidation methods for incineration treatment, while small and medium-sized catering industries mostly use catalytic purification methods.
The development of kitchen oil fume purification work in mainland China is relatively late. Since the 1980s, with the acceleration of reform and opening up, the number of joint ventures and wholly foreign-owned restaurants has gradually increased, and some star-rated hotels have begun to install oil fume purification equipment ，but the number is relatively small. Article 44 of the "Air Pollution Prevention and Control Law of the People's Republic of China" revised in 2000 clearly stipulates that "operators of urban catering businesses must take measures to prevent oil fume from polluting the living environment of nearby residents." To cooperate with the implementation of the Air Pollution Prevention and Control Law, the State Environmental Protection Administration promulgated the "Emission Standard for Oil Fume in the Catering Industry" (GB 18483--2001), which came into effect on January 1, 2002. It stipulates that the maximum emission concentration of oil fume in the catering industry is 2.0 rag/m3, and it also promulgated the oil fume detection and analysis method, providing a technical basis for the control of oil fume in the catering industry. After that, the efforts to control kitchen oil fume in China's catering industry have gradually increased, and various oil fume purification equipment have been developed in large quantities. After application, improvement, and repeated application, they have now developed into four major categories: mechanical oil fume purifiers, filtration oil fume purifiers, washing oil fume purifiers, and electrostatic oil fume purifiers.
